Carol raises Nigerian Dwarf goats on her one-acre micro-farm in Redmond. A
retired RN, she has experience teaching “Survival Gourmet” cooking classes and other health-related topics at the Free School in Santa Cruz, CA. She moved to Central Oregon 9 years ago to realize her life-long dream of raising goats, only to discover that she didn’t know how much she didn’t know about those quirky, sensitive, and loveable creatures. She is eager to share what she has learned about how to keep her goats healthy, happy, and productive, and to empower others with goaty aspirations to be well-prepared for the adventure of goat husbandry. She also enjoys making cheese, yogurt, and occasionally ice cream from the milk they produce, and is looking forward to sharing this process with the community. Carol has converted many skeptical non-goat-cheese lovers with her very mild, creamy, un-goaty goat cheese, and can share some secrets about the process.
